These are supposed to taste like stuffed cabbage but without all the work of blanching the leaves and rolling them. I haven't tried any of these yet (just winged it) but if anyone does would you mind posting a recipe review?

#1 Unstuffed Cabbage Casserole - Slow Cooker

Serves/Makes: 6
1 pound ground beef
1 small onion -- chopped
4 cups chopped cabbage
1 green pepper -- chopped
1 cup uncooked instant rice
1 cup water
6 ounces tomato paste
15 ounces diced tomatoes -- undrained
1/2 cup ketchup
2 tablespoons vinegar
1 tablespoon sugar
1 tablespoon Worcestershire sauce
1 1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon garlic powder

Brown beef and onion in skillet; drain well. Combine all ingredients in crockpot. Cover; cook on low for 4-5 hours.

#2 What I do is grease a roaster, put chopped cabbage on the bottom, put over this about 1/2c. long grain rice, sprinkle with salt and pepper. Lay a layer of lean raw ground beef on this and season again. Then I open a can of tomato soup, add a bit of dry mustard, vinegar, brown sugar and 3/4 can of water and pour this over and bake for an hour. Sauerkraut over the rice layer is good too, you cannot mess this up.


#3 Cabbage Roll Casserole

1/2 small head of cabbage
3/4 pound ground beef
3/4 pound ground sausage
1 cup instant rice uncooked
1 cup water
1 16 oz can tomato sauce
1 16 oz can diced tomatoes
1 16 oz can sauerkraut
1 onion

Brown Sausage, gr beef and onion
I season my meat mixture heavily.
Shread cabbage and place in baking dish, I use pam in mine. Place meat mixture over cabbage, I season mine again here. Put the one cup of rice over the meat, and put the sauerkraut over the rice. (I ALWAYS use more *** as we love it) Mix together (makes it more simple) Tomato sauce, diced tomatoes and water, paour over ***. I season mine again here. Cover and bake for one hour @ 350. I usually bake mine longer to assure the rice is done.

This sounds great! I love to make cabbage rolls, but they take so much time with rolling them and all. This is so much easier!

All of the ones posted above look like they'd work fine.

This is how I've done it for years:
I took the basic C roll recipe and tweaked it as shown on the bottom of the page.

I'm also adding a Stuffed cabbage soup recipe to the bottom of my post that is simply wonderful also.


Stuffed Cabbage Rolls

2 lbs ground beef or half ground beef half Italian sausage
2 eggs
½ cup uncooked rice
1 small onion chopped fine
Salt and pepper to taste
A little milk

Mix together and form into large meatball sized balls

1 head cabbage par boiled to soften leaves

Roll the meat up into the cabbage leaves folding in the edges and leaving the stem end tucked under in pre greased (olive oil) pan. (with this recipe I get about 10 rolls)

2 large cans tomato sauce
1/8 cup sugar
2 tbsp butter
4 tbsp cornstarch
2 tbsp Oregano
1 tbsp basil
More salt and pepper to taste
Boil this mixture in a sauce pan for a few minutes to blend and thicken then pour over cabbage rolls

Bake at 350 degrees for 1 ½ hour in a covered 9 x 11 deep casserole dish. Remove cover and sprinkle with shredded Parmesan cheese bake a few minutes around to melt/toast the cheese

Served with Italian bread and Pasta Salad.

STUFFED CABBAGE CASSEROLE

Use same ingredients as above except substitute a bag of slaw mix (or chop up the head of cabbage)

Brown the meat, sauté in the onion with the meat.
Pre cook the rice
Layer cabbage, meat, rice, and sauce lasagna style.
Bake @ 350 about 30 minutes covered, uncover add the cheese and heat about 10 minutes longer.

You can also cheat and make it even easie and substitute a jar of your favorite marinara sauce instead of making the scratch type.


Stuffed Cabbage Soup

2 lbs ground beef
2 large onions chopped

(brown together and drain)

in a LARGE pan add

I medium sized head of chopped cabbage
1/2 cup white sugar
1/4 cup lemon juice
1 14oz size can of beef broth
2 28 oz size cans of tomato sauce (or 1 14 oz size can Tomato paste with 2 28 oz cans of water)
1 28 oz can of diced tomatoes
1 tbsp Oregano
1 tbsp basil
2 28 oz cans of water
Heat to boiling
then add 1 cup of white rice
Salt and Pepper to taste
Cover and simmer about half an hour

Looks good. Am going to try that. Yes I too have done cabbage rolls but didn't think they were worth the work so the casserole is much better. Maybe I'll do them tonight as I have all the ingredients here. Then we can eat on it fo several days as there are just two of us.

Hey Esther, are you from the south by any chance? My neighbors who are from Tennessee. use the phrase "eat on it". I had never heard that before here in MI. I have had several people ask me if I am Canadian because I sometimes follow a phrase or sentence with "eh?" I didn't realize I sometimes did that until I was asked about it. I must have picked it up from my grandmother who was from Nova Scotia, Canada. Funny how some phrases are regional. ex[smile2]
