1 T olive oil
2 C. choped onions
1 c. chopped celery(I used diced carrots, mushrooms & summer squash. It's what I had
1/8 t. cayenne pepper (skipped this)
2 lbs. smoked pork sausage (1 lb diced)
3 c canned white beans rinsed and drained
(I used dry northern)
2 Bay leaves
2 T chopped garlic (I used diced canned)
4 C. Chicken broth (I used water and powdered chicken soup base)
3 fresh thyme sprigs (dumped in dry thyme)
1/2 C chopped green onions (skipped this)
2 T. chopped fresh parsley (used dehydrated)
Saute onions and celery in olive oil. Add pepper. Season with salt and pepper to taste. Add sausage: saute' 4 minutes. Stir in beans, bay leaves, garlic, broth, 4 C water and thyme. Boil and skim off foam if desired. Simmer uncovered 20 minutes. Stir in green onions and parsley. Serve.
I used dried beans and dumped everything in the crock pot for about 5 hours on high. I did add a little cornstarch to thicken. We liked it.
