Zucchini

A friend from church gave me two. One was bigger around than a ball bat easily. So I shredded one and fried it with onions to put spagetti sauce over and then used another cup in a batch of bread. I still have to shred the big one and then freeze the leftover to use later in recipes.

I love fried zucchini. large ones sliced then the slices dipped in an egg/milk mixture then dredged in salt and pepper seasoned flour then fried to a crispy coating..yum yum.

I like to take the small zucchini's and slice and fry with some chopped onion and just eat them. I've never put spagetti sauce over it though.

Yup, Pete said that he was aprehensive about using it instead of pasta but said it was great.
