use the recipe just like you have read, The tuber doesn't need to be buried. I just "rested" it on the compost and weighted it down with the gravel. It took some time to get started, but when it finally did it was gangbusters.
I plan on doing the same thing you talk about...that being burying the pot in the ground. If it is planted deep enough, maybe it won't freeze all the way to the bottom and then some of the tubers will survive the winter. Last fall I procrastinated and let my above ground pot freeze solid. This year I'm planting one in a pot in the pond and the rest in pots buried in the yard near the pond. I think if done right, the pots will kinda look like part of the pond so it will seem like our pond is bigger than it really is
